日本で有名な中華料理と言えば、
One of the most popular Chinese dishes among Japanese is..

餃子

*dumpling
を思い浮かべる人は多いと思います。 
I think a lot of people would agree on this.

10年前に仕事で中国へ行ったとき
I went to work in China around 10 years ago.

「そうだ、餃子を食べに行こう」
"Shall we go have some Gyoza?"
We all agreed


と餃子のお店を探していたら、
so we went out and looked for a Gyoza place.


あるのは、水餃子のみ。。。
仕方なく水餃子を食べることにしました。
What they had was Gyoza...
We had no choice so we decided to eat the boiled Gyoza.

「まぁおいしいからいいかっ」
"Well, that was pretty good!"

と帰国
Then we came back to Japan.

この話を同僚に話していると、現れたのは食に詳しい先輩
When I was talking with my colleague, my senior who was a food expert showed up

そして、一言
and said

If you say Gyoza in Japan, it means pan-fried dumplings BUT
if you say Gyoza in China, it means boiled dumplings.
Don't you know that Chinese people don't eat fried dumplings?

その食通の先輩の言葉を信じ、「中国人は焼き餃子を食べないんだ」という固定観念が頭にこびりつきました。
I believed in the words of the food expert seniors and always keep it in my mind that "Chinese people don't eat grilled Gyoza".


10年後、再び中国へ
After that 10 years, I went to China again


な、なに!?
WHAT'S THIS! ?

焼き餃子屋さん、あるじゃん!!!
しかも、専門店!!!
This is a fried Gyoza shop, isn't it?!!
Moreover, this is a special fried Gyoza (only fried Gyoza) shop!!!

というわけで、
 That means..
Speaking of Gyoza, Japanese people think of fried Gyoza while Chinese people think of boiled Gyoza.
In Japan, people commonly eat grilled Gyoza and rarely eat boiled Gyoza.
On the other hand, in China people commonly eat boiled Gyoza and rarely eat grilled Gyoza.

さらに、留学生への調査を経て、「食べ方の違い」や「材料の違い」があることもわかりました。
Furthermore, after I got a survey from foreign students, I also learned that there are "differences in eating habits" and "differences in ingredients"


①食べ方の違い
1. Differences in eating habits
Boiled Gyoza is considered as a main dish. The normal serving size would contain 2-30 Gyoza.
Fried Gyoza is considered as a side dish along with rice. 15 Gyoza would be considered.

②材料の違い
Differences in ingredients
Boiled Gyoza: soup/no soup                    ingredient: fish, lamb, corn, and others
Fried Gyoza: nice pan-fried brown color   ingredient: cabbage, leek, meat, garlic, ginger

以上を考察しますと、餃子と聞いたときに
Considered what I wrote above, when I heard the word Gyoza

日本人のイメージ:焼き餃子
中国人のイメージ:水餃子
Japanese image: Fried Gyoza
Chinese image: Boiled Gyoza

実は頭の中でイメージするものはこれだけの隔たりがあるのです!!
Actually, it is only this gap that I bare in my mind

「餃子」を食べに行こう、と日本人と中国人が話す場合は、
焼き餃子か水餃子かを明確にすべき
When asking Japanese or Chinese to go out and eat 'Gyoza', you should make it clear whether you are going to eat fried Gyoza or boiled Gyoza

中国文化の影響の強い長崎では、中華街以外でも、昔から水餃子専門店や一口餃子の店、焼小籠包の店もあります^^
In Nagasaki where we got a strong influence from Chinese culture, you can find many boiled Gyoza shops, bite size Gyoza shops and also Xiaolongbao shops (Chinese steamed bun) from old times in Chinatown and other parts of the town :-)

I am learning more about the history of Gyoza
